I wish the car would always automatically engage the parking brake when I shut the engine off. Learning on a manual car and still owning one, it's been a habit of mine since I started driving to always set the parking brake - always. The Palisade only auto engages the parking brake if it gets shut off on an incline/decline.
I agree - I wish it was at least an option to have the parking brake automatically set when shutting off the car. It should be a simple software change so maybe a future update would include this.

The parking brake will be automatically applied when you touch the start/stop button if:
the engine is running and
the car is stopped with your foot on the brake and
the car is in gear and
your seat belt is on and
auto hold is on.

Under these conditions, when you touch the start/stop button:
the engine will shut off,
the driver's door will unlock,
the driver's seat will move to the easy enter/exit position,
the transmission will go into park and
the parking brake will be applied.

I habitually use auto hold and just realized yesterday that it was a necessary condition for the parking brake to automatically be applied.
